Chef came out of the home made kitchen (home made as in they had rebuilt a house/home into this resturaunt) talking about where the fish had swum.
I suppose that makes a difference; just as the grass cows eats really differs from the grass on the other side. With pollution in the mix, who would think genes matters?
That aside – as with most overpriced foods, goods and services: pretty great stuff.
